Now look what happens when you run a Ritz cracker under water…. It keeps its shape and doesn’t break up. It’s essentially a waterproof cracker now…
This is because the cracker now has 23% fat by weight due to the new seed oils. The new soybean, canola and palm oils coat the flour and starch particles. Since Fat is hydrophobic, it slows how quickly water can penetrate the cracker and break it down making the new Ritz crackers seem waterproof
